Abstract

Objectives: To prepare cycloalliin-rich liquid extracted from black shallot. Methods: In-process parameters affecting the process of cycloalliin-rich liquid extraction were investigated and chosen. These parameters were applied to prepare the process of shallot liquid extraction at 200 g/lot scale and determine the repeatability via the recovery of CYC. Results: The suitable parameters of cycloalliin-rich liquid extracted from black shallot were investigated, including: Using a hot-extraction method at the temperature of 80°C, a solvent of 50% EtOH, a solvent-to-material ratio of  20/1 (mL/gram), two extraction times, and 120 minutes each time. From these parameters, an extraction process of black shallot at 200 g/lot scale was prepared with the recovery of CYC at 90.3 ± 0.6%. Conclusion: An extraction process of cycloalliin-rich liquid extracted from black shallot at 200 g/lot scales was successfully established.
